Tuesday Aug. 14th - Chicken Souvlaki with warmed Tortillas!!  Served with my White Sauce, Fresh Diced Georgia Tomatoes, Sliced Onions and Fresh Lettuce. YUM!!!  Plus my AMAZING Triple Chocolate Brownies!

 

This is one of my FAVORITE childhood Dinners! Most of my friends were eating TV Dinners and Hamburger Helper and please don’t get me started on Spagetti O’s! My parents always seemed to be ahead of their time. Thank goodness!! Chicken Souvlaki features the fresh tasting combination of Fresh Lemon Juice, Chopped Garlic, Oregano and Olive Oil that is soo prevalent in Greek Cooking. Adding the Char of the Grill just adds even more flavor! Now the sauce that I serve with it is not the traditional Tzatziki but I promise you will love the combination of the marinated flavors of the Grilled Chicken combined with the White Sauce. If you had this the last time it was on the menu you will know what I am talking about. The Souvlaki comes on a skewer which always gets kids excited. Let’s not lie, grownups love anything on a skewer as well! (-: It is served with freshly warmed Tortillas to wrap the Souvlaki in with thinly sliced Red Onions, Tomatoes, lettuce and the YUMMY sauce that will be dripping down your hand. You won’t care because the flavors are AMAZING together!! This is a Dinner that you just don’t put down so a side item is not necessary. Everything you need is all together in the Tortilla. But what you do need is my Triple Chocolate Brownie to finish a GREAT meal!! Don’t miss this fantastic Dinner. 2 skewers and 2 tortillas per person. Thursday Aug. 16th - Individual Meatloaves with Whipped Mashed Potatoes and Home style Green Beans YUM!!

Meatloaf has always gotten a bad rap! It’s not the most attractive name I will give you that. And over the years you have probably had some really dry and bland boring versions of it. I guarantee you that this Dinner is not any of those things. This was the first Dinner I ever made when I was 8 years old. My only regret is that I don't have pictures of myself standing on the step stool in the kitchen making it! The Individual Meatloaves are juicy and full of flavor and are topped with a sauce that makes it even better. For me the perfect bite is a forkful of Meatloaf, Potatoes and Green Beans all at the same time!! Don't judge me it's just pure perfection. Don't miss it!

This week's Soup - Italian Sausage and Lentil Soup!!

 

This Soup is soooo good!  You should buy extra to freeze.  It is so GREAT to be able to have it on hand especially when life gets so busy and you just don’t feel like spending an hour in the kitchen cooking.  It starts with chopped carrots, celery, onions & garlic.  Next comes the fresh Italian Sausage and Chopped Tomatoes.  Then I add Homemade Chicken Stock and Herbs and Spices and let it simmer until the Lentils are tender.  The soup is then partially pureed.  Next I add more tomatoes, onions, carrots and celery for another layer of flavor and texture and let it simmer for a few more hours until I can't stand it any longer and I have to have a bowl or TWO!!  Adding some freshly grated Parmesan Cheese just makes life even better!!
