Rajin Cajun Chicken with Linguine and Garlic Bread!

Throw me something mister!!! That is what you are going to say while you are eating this Dinner! I was trying to figure out how many times I have been to New Orleans. I used to visit 5 times a year for about 7 years for work both Pre & Post Hurricane Katrina so I guess I’ve been more than 35 times! Not including when I was in College. As I have "matured" I no longer have the desire to be there during the Mardi Gras celebration but I LOVE the food so much! It has been awhile since I have offered this Dinner to you. If you have never tried it DO NOT miss it. It has spice to it but it's not over the top spicy. I like to be able to taste and enjoy my food just as much as you! Turn your house into a bead throwing zone! Diced Chicken Breast with in-house made Cajun Spices, Onions, Garlic, Tomatoes and Heavy Cream all simmered together and served with Linguine and Garlic Bread to dip into the Sauce. YUM!! Don’t miss out. Don’t forget to make Hurricanes to go along with it. (-;

 Pistachio and Herb Encrusted Sole with a Creamy Chimichurri Sauce and Pineapple Rice. 

I have really missed this Dinner! It is sooo YUMMY but it’s also easy on your waistline. How often does that happen??!! I absolutely love Sole! It is such a great fresh flakey non fish tasting fish that everyone loves even if they think they don't like fish!! Your kids will never ask for fish sticks again! Ok....they are kids, they might. (-: The Sole is topped with Toasted Chopped Pistachio Nuts & Panko Crumbs, Chopped Fresh Oregano& Cilantro. Sooo flavorful! The Creamy Chimichurri Sauce is so great that if you have leftovers of the Sauce use it on Anything and EVERYTHING THAT YOU CAN. Paired with the Pineapple Rice it is such a great Dinner you might ask us to make it for you every week!! (-:
