This is a GREAT Dinner!!  Now don’t get upset but I use Flour Tortillas instead of Corn for my Enchiladas.  I happen to prefer Flour Tortillas because they hold up better and don’t disintegrate.  What raises the bar on this dish is the Homemade Red Enchilada Sauce!! Most restaurants use canned Sauce and after enjoying my Enchiladas you will be spoiled!  Sorry!! When you eat out at a Mexican Restaurant you are more than likely going to get a side of rice.  It’s usually more of an afterthought from the kitchen. Over cooked with little or no flavor.  Not my Mexican Rice, you will actually be fighting over it!!  Make yourself a great Margarita!  Put Dinner in the oven and enjoy it in only a few minutes and refill your Margarita!! (-:  Don’t forget the Lemon – Honey Glazed Carrots.  (-:

Thurs. June 8th - P3 with Cheesy Diced Potato Gratin. Add on Sautéed Summer Squash with Red Onions for $3 per person

 

I LOVE this Dinner.  The 3 P's....Pork Loin, Pretzels and Panko.  I'm a huge fan of pretzels as well as mustard!  I start with a Center Cut Boneless Pork Loin Chop and pound it out.  Then I slather it with a combination of Ground Mustard and Creamy Butter and then toss it into a mixture of Panko Bread Crumbs and Crushed Extra Dark Pretzels that makes an amazing flavor combination.  I love to serve it with my Diced Potato Gratin.  It is ridiculously good!!  Potatoes, Cream, Cheese....do I need to go on??  Don't miss it!  Don’t forget the Summer Squash. (-;
